PINK TOMATO

with three Balkan cheeses and pickled cornichon

PUMPKIN

pumpkin & cow cheese mousse  with mixed leaves, savory pumpkin seeds and croquette of white Bulgarian cheese

AUBERGINE

roasted  aubergine with couscous and dried tomatoes, brunza, black olives and parsley

CAULIFLOWER

roasted, pickled and raw cauliflower, served with quail eggs, marinated in curry

typical Balkan starter with peppers and aubergine, with white cheese mousse

BEETROOT

cream of beetroot with fresh & goat cheese on top of poached pear and Balkan trout

TERRINE DE CANARD

with armagnac and rosehip, apple & verbena jam on top of sweet bread

GYOZA

East meets West – rice pastry with Mangalica pork, shrimps and spices

TUNA TARTARE

served with Japanese mayo, spicy Japanese pepper, and black caviar of Bulgarian sturgeon

TUNA STEAK

steak of fresh tuna from Aegean sea, served with Asian rice and curry sauce

DUCK MAGRET

from Parvomay marinated in XO sauce, served  with noodles with vegetables and duck liver in tempura

DRY AGED BEEF TENDERLOIN

of free-range cattle with couscous on the side, peppers, duck liver and fresh truffle

LAMB TENDERLOIN

satay style on top of fresh vegetable ‘spagghetti’, tarama caviar and arancini

PASTA FRESCА

with nettles stuffed with porcini & chanterelle mushrooms, dried tomato,  brunza and truffle

MATURE KASHKAVAL

of free range sheep milk, grilled and served with red lentils cream with savory herb and coconut

yogurt hemisphere, which hides two honey mousses, walnut biscuit and honey jelly
